This recipe comes from Sue who left this alternative recipe as a comment on the other corned beef recipe.
Sue reckons a slow cooker or crock pot makes the best corned beef.
Ingredients:
Corned beef from butcher or supermarket
1 large or 2 medium onions
A good big slosh of vinegar
10 peppercorns
5 cloves
2 tablespoons of sugar
Water – enough to cover the beef
Method:
Take your corned beef from the supermarket. Wash it under the tap.
Roughly chop the onion and put it in your slow cooker. Put the meat on top with the fatty side up.
Combine the vinegar, peppercorns, cloves and sugar and pour over the meat. Top the pot up with water so the meat is just covered.
Set the slow cooker on low and go to work.
When you arrive home from work take out the meat, cover with foil or baking paper and tea towels and let it rest. It will oooze a bit – well actually a lot. Drain.
Slice and serve with, mashed potato, cabbage, carrots etc.
Put the balance into the fridge and the day after next make New York Corned Beef Hash. Yummy.
